The Winemaking Revolution
Since the 1970s, substantial improvement in winemaking practices — often called a "winemaking revolution" — has transformed Italian cellars into state-of-the-art facilities. Italy has become one of the most important producers and exporters of winemaking equipment in the world.
Modern techniques have been incorporated into traditional practices to capitalize on the best attributes of each. Today, innovation and tradition co-exist. Concrete tanks and amphoras are once again in fashion, as are skin-macerated white wines.
Regulatory Framework
Chaptalization
Chaptalization is FORBIDDEN in Italy.
Must enrichment (arricchimento) is permitted in DOCGs/DOCs if allowed by their disciplinare. Done in poor vintages using Mosto Concentrato Rettificato (MCR) — rectified concentrated grape must. Requires annual government and regional approval.

Traditional vs Modern
The "modern" approach emerged in the early 1980s when a new generation traveled to USA, Australia, New Zealand. They embraced riper fruit, less tannin extraction, and French oak barriques.

In regions like Barolo, the barriques debate caused feuds lasting years. Today, many wines use a blended approach.
White Wine Production
White Wine Revolution
While red wines were improved by 1970s technology, white wines were "literally reborn." Traditional skin contact was abandoned for temperature-controlled fermentation, stainless steel, cultured yeasts, filtration. The new clean, crisp wines were later criticized as lacking complexity.
This led to readjustments: natural yeasts regained importance, wood reintroduced for texture, short cold macerations became common. As of the 2000s, Italian whites show diversity, character, and distinction.
- Harvest & Press: Best practice = whole cluster pressed (gentler than crushing, cleaner juice)
- Optional SO₂: Prevents microbial spoilage, browning, oxidation
- Juice Settling: Decantazione statica — chilled 12-24 hours. Gross particulates settle (cause off-flavors if left). High-volume: flotation or centrifuge.
- Acid/Sugar Adjustment: Where permitted by law
- Fermentation: 57-68°F (14-20°C) in stainless steel, concrete, or oak. Temperature control = long, cool fermentation = maximum aromatics.
- Optional MLF: Suppressed in aromatic varieties (lactic notes undesirable)
- Optional Sur Lie Aging: Adds nutty complexity, creamy character from autolysis
- Racking: Travasare — move wine off fine lees
- Clarification: Flotation, centrifuging, filtering, fining
White grapes crushed and macerated on skins to increase aromatics, structure, body.
Duration: Hours, days, months, or even years depending on style
Best for: Most commonly aromatic varieties for maximum aroma extraction

Middle ground: Some create estate-specific cultured yeasts from indigenous populations.
Malolactic Conversion (Conversione Malolattica)
Process: Bacteria-driven (not yeast). Lactic bacteria convert tart malic acid → softer lactic acid.
Effects: Total acidity drops, sensation softens. Aromas of yogurt, cream, butter.
Suppression: Add SO₂ for aromatic varieties (lactic notes undesirable, freshness wanted)
Lees (Sui Lieviti Aging)
Lees: Dead yeast cells settling after fermentation
Benefits: Protect from oxidation; wine picks up nutty complexity
Autolysis: Yeasts decompose, release mannoproteins = creamy, round mouthfeel
Bâtonnage (Lees Stirring)
Minimizes overt oakiness, increases richness/texture/yeastiness, reduces H₂S, increases stability, integrates MLF flavors. However, introduces oxygen (may hasten oxidation).
History: Archaeological evidence of amphoras for wine storage in Georgia 8,000+ years ago. Roman name: dolium (plural dolia).
Renaissance: Collio winemaker Josko Gravner released first qvevri-aged wines in early 2000s. He pioneered amphora use in modern Italian winemaking.
Vessel Types:
- Qvevri: Georgian clay amphoras
- Tinajas: Spanish clay (less porous)
- Cocciopesto: Ancient Roman mixture (broken tiles, stone, cement, water). Used for aqueducts. Does not impart flavors but allows micro-oxygenation.

Red Wine Production
Red Wine Evolution
Stainless steel fermenters gradually replaced wood in early revolution years — trend has partially reversed as winemakers appreciate wood's role. Today: stainless, wood, terracotta, concrete all used.
Traditional long macerations shortened as rule, but high-quality producers keep 3-4 week macerations for structure, complexity, aging potential.
Oak Evolution
- Traditional: Large Slavonian oak or chestnut casks (botti)
- 1980s onwards: Small French oak barriques and tonneaux
- Today: Many reducing new oak, returning to larger neutral casks for varietal character and terroir
- Optional Sorting
- Optional Destemming: Green stems = bitter/astringent; brown/ripe stems = spicy notes. Some add whole clusters.
- Optional Crushing (pigiatura)
- Optional Cold Soak: 36-46°F (2-8°C) for up to 6 days. Extracts fruit aromas without tannin.
- Fermentation: Up to 90°F (32°C), lasts 1-3 weeks depending on grape, concentration, style

Frequency: Early fermentation = 4x/day for maximum extraction; end of fermentation = 1x/day
Process: Whole clusters hand-harvested, placed in tank without crushing/destemming/pressing.
- Bottom grapes burst from weight; wild yeasts start alcoholic fermentation
- CO₂ released forces out oxygen → anaerobic environment
- Intact grapes undergo unique enzymatic metabolism inside berry
- Small portion of malic acid → ethanol (~2% abv) via enzymes
- Aromas created: banana, hard candy, pear, raspberry, cranberry
Duration Impact
- Shorter vatting: More explosive aromatics
- Longer vatting: Deeper pigment, more tannin, richer flavors
Result: Light, soft, fruit-forward wines with less tannin than traditional reds.
Note: FULL carbonic maceration requires tank filled with CO₂ and uncrushed grapes.
Stem Inclusion
Controversial — effects not fully understood. Results can be unpredictable.
- Green (unripe) stems: Bitterness, astringency
- Brown (ripe) stems: Spicy component
- Benefits: Slight decrease in pH; slower fermentation = more glycerol, lower alcohol
- Historical use: Helped extract juice in press (channels for liquid)
Sparkling Wine Production
Italy's Sparkling Dominance
Italy has been world's largest sparkling wine producer since 2016.
Great majority produced via tank method (preserves aromatics). Traditional method (metodo classico) gaining recognition. Frizzante wines (1-2.5 atm) important in Emilia-Romagna and Oltrepò Pavese.
Developer: Federico Martinotti (Piemontese oenologist) in 1895; refined and patented by Eugène Charmat in 1920s.
Process: Second fermentation in temperature-controlled stainless steel autoclaves (not individual bottles).
- Base wines blended, clarified, refrigerated
- Placed in autoclave
- Sugars and yeasts added → refermentation
- CO₂ trapped, dissolves into wine
- Filtered and bottled under pressure
Best for: Aromatic varieties — aromatic profile not obscured by autolytic character of prolonged lees aging. Speed preserves aroma intensity.
Examples: Asti DOCG, Conegliano Valdobbiadene DOCG, Prosecco DOC
Variation of tank method — does NOT involve creating dry base wine first.
Process: Single fermentation stopped and restarted at specific points.
Result: 7-9.5% abv, 5-6 atm pressure, required residual sugar
Advantage: Even better for aromatic grapes — single fermentation and lack of lees contact preserves fragrance and fresh quality.
Two separate alcoholic fermentations (differs from rural/ancestral method's single interrupted fermentation).
Process
- Harvest: Hand-picked at 9-11.5% potential alcohol
- Press: Whole clusters pressed quickly; wide, flat presses for clear juice from pigmented grapes
- First Fermentation: Creates dry "base wine"
- Assemblage: Base wines blended (cuvée); consistency maintained by mixing vintages
- Tirage: Liqueur de tirage (yeast + sugar) added; bottled for second fermentation
- Sur Lattes: Bottles stored horizontally on wood strips; 30+ days fermentation
- Aging: On lees — yeasts decompose (autolysis), release proteins → texture, toast/brioche aromas
- Riddling: Scuotitura — bottles turned to move lees to neck. Traditional: 3 months by hand. Gyropalettes: 1 week mechanically (50,000 vs 6,000 bottles)
- Disgorging: Sboccatura — neck frozen in brine; cap removed; ice plug with yeast ejected. Traditional method still used by some (especially for magnums)
- Dosage: Liqueur de dosage / sciroppo di dosaggio / rabbocco — sugar + reserve wine added to balance acidity
- Cork & Rest: Cylindrical cork compressed to half width; mushroom shape; wire cage; rest to marry dosage
Key Points
- Transversage: Large/small bottles filled from disgorged 750ml bottles
- Non dosato: Topped up with same wine (no added sugar)
- MLF: Historically done; now increasingly optional due to climate change (retain acidity)
- Italian advantage: Extra ripeness = well-balanced wines needing less dosage than Champagne

Historic method: Partially fermented must chilled and bottled. Results in:
- Lightly sparkling (<5 atm)
- Perceptible residual sugar
- Sediment from dead yeast
Modern variation: Partially fermented must bottled with yeast (often alginate beads), disgorged after 2-3 months. Delicately sparkling, perceptible sweetness, no sediment.

- Trento DOC: Metodo classico; Chardonnay, Pinot Nero; long lees aging

Rosato & Sweet Wine Production
Rosato Production
Minor category in Italian wine but some regions recognized for this style.
Process: Grapes pressed immediately after harvest to minimize skin contact.
- Skin contact: Duration of press cycle only (1-4 hours)
- Fermentation: Like white wine, 57-65°F (14-18°C), without skins
- Aging: Few months in tank
- Character: Preserves grape aromas; light color
Note: Not related to red wine production — meant solely for top-quality rosato.
French: Rosé de Saignée
Process:
- Grapes crushed as for red wine
- Macerate 8-24 hours at 60-68°F (16-20°C)
- Pink juice "bled" from tank → fermented into rosato
- Remaining liquid (higher skin:juice ratio) → concentrated red wine
Result: Two wines from same grapes — rosato + concentrated red.
Character: Deeper color, fuller body, more tannic than direct press (longer skin contact).
Sweet Wine Production
Italy has sweet wine tradition pre-dating Middle Ages, produced across the country.
Primary Method: Appassimento
Drying grapes after harvest to concentrate sugars, acids, flavors. Some areas also use late harvest and/or noble rot.
Botrytized Wines
- Whole bunches not destemmed (stems help extract juice during pressing)
- Fermentation terminates naturally when yeasts die → residual sugar
- MLF not encouraged — wine needs acid to balance sugar
