The Vine's Challenge
The grapevine can survive and thrive where other crops cannot. It clings to rock and cliff, sets deep roots, and bears fruit in diverse soils and climates. Italy's historical isolation of winegrowing areas (due to geography, topography, politics) allowed ancient practices and vines to survive into the modern age.

The Vineyard Year
Annual Cycle
Vines pruned when dormant to maintain size/shape and control productivity. Clippings burned or mechanically ground; chips and ash returned between rows.
Buds swell and open. Shoot growth accelerated by warmth, retarded by cold. Earth hilled up in autumn (to protect trunk/graft from winter freeze) is removed.
Occurs 6-9 weeks after bud break; bloom lasts 8-10 days. After self-pollination: berry set. Early-ripening varieties picked 8-10 weeks after; late-ripening up to 18 weeks.
Leaf-pulling exposes clusters to sun, increases air movement, mitigates humidity and disease. Shoots may be tipped; green harvests limit yield.
Vine stops vegetative growth, puts energy toward fruit ripening. Green grapes become translucent; pigmented grapes change color. Berries soften; sugars increase, acids decrease.
Most grapes picked ~45 days after véraison. Timing impacted by sunlight hours, heat, and year's specific conditions.
Growing season of 165-180 days concludes. Fertilizer applied; vines may be hilled up. Cover crops planted.

Vineyard Challenges
The 19th Century Catastrophes
Phylloxera, downy mildew, and powdery mildew — all native to North America — appeared suddenly in Europe in the 1800s. Steamships enabled these pests to survive the faster Atlantic crossing.
Origin: Small insect indigenous to eastern USA
Attack: Kills vines by attacking roots. Injects saliva creating galls (knots of uncontrolled cell growth). Vitis vinifera cannot heal bite wounds — bacteria/fungi enter and rot the root.
Solution: Grafting European scions onto American rootstock
Post-Phylloxera Changes
- Row planting: Pre-phylloxera vines propagated by layering (haphazard). Replanting in rows enabled mechanization.
- Single-variety parcels: Previously, multiple varieties harvested/fermented together (mixed ripeness). Replanting allowed better maturity management.
- Variety changes: Canaiolo (once Toscana's principal grape) declined — very difficult to graft onto American rootstock.
Symptoms: Blankets vine with thick, white filaments
Impact: Before flowering = reduced yields. Infected clusters = incomplete pigment, smaller berries, off-flavors.
Treatment: Sulfur sprays
Conditions: Germinates in warm, humid weather
Symptoms: "Oil spots" on leaves/stems, then white cotton filaments. Causes leaf loss, delayed/prevented ripening. Inflorescences and young berries wither and die.
Treatment: Bordeaux Mixture (copper-sulfate) — developed by Pierre-Marie-Alexis Millardet at University of Bordeaux. Same scientist pioneered grafting technique with Jules Émile Planchon.
Main diseases: Esca, Eutypa, Botryosphaeria
Cause: Fungi that attack vine through pruning wounds (main entry point)
Symptoms: Can take years to develop; mimic other maladies. Kill spurs, cordons, trunks.
History: Sodium arsenate controlled Esca until banned (1970 in Italy). Incidence has grown rapidly since.
Severity: In some regions of Toscana, Marche, Abruzzo, Puglia, Sicilia: 60-80% of old vineyard vines infected. No variety shows resistance.
Treatment: Prevention only. Careful pruning timing; proper disposal of waste. Simonit & Sirch developed trunk surgery technique — 90% of treated vines return to full productivity.
Classification: "Grapevine Yellows" disease caused by phytoplasma
Vector: Leafhopper (Scaphoideus titanus) — likely from North America. Once carrier, remains inoculative for life.
Symptoms: May take until next season to appear. Shriveled flowers/berries, leaf curling, shoot necrosis. Death is usual outcome; some enter remission but remain inoculum source.
Control: Remove and destroy infected vines; control vector with pesticides.
Impact: Langhe particularly hard hit — Barbera and Dolcetto show high infection rates.
Dual nature: Can be beneficial (noble rot/muffa nobile) or harmful (gray rot)
Noble Rot (Beneficial)
- Attacks tight-clustered varieties
- Penetrates skin, desiccates berry, concentrates sugars/flavors
- Requires: cool, moist nights/mornings followed by warm, dry afternoons
Impact on Berry
- Reduces total sugar by 1/3
- Drops tartaric acid by 5/6, malic acid by 1/3
- Reduces water content by half = increased extract
- Produces gluconic acid = honeyed character
Gray Rot (Harmful)
Occurs with continuous wet weather before harvest. Causes off-flavors or crop loss.
Arrival: Europe 2008 via agricultural exchange
Attack: Females lay eggs inside grapes; larvae feed on pulp. Compromised skins allow acetic acid bacteria and fungi to enter.
Severity: Up to 13 generations per year = devastating infestations
Coulure
Poor fruit set caused by cloudy, cold, or wet weather at flowering. Stems shrivel and shed nascent berries. Can also result from over-vigorous vines (carbohydrate deficit) or overly dense canopy (too many shaded leaves).
Training Systems
Training System Purpose
Italy employs many different vine-training systems — each region's viticultural traditions shaped by local environment. Training systems can be considered an expression of the viticultural evolution of a specific territory.

High-Trained Systems
History: Introduced by Etruscans — first high-training system
Method: Vite maritata all'albero ("vine married to tree"). Vines trained high in trees using branches as support.
Character: Long canes and cordons, dense canopy, abundant grapes
Status: Widely practiced until mid-20th century; ancestor of pergola and tendone
Structure: Canopy grows 4-6 ft (1.3-1.9m) high, spreads on horizontal or inclined arm
Variants:
- Pergola Veronese: Horizontal arm
- Pergola Trentina: Inclined arm
- Pergola Abruzzese: Adapted from tendone for lower yields
Regions: Trentino-Alto Adige, Veneto, Romagna
Climate change: Seeing resurgence in Valpolicella — provides shade protection from sun damage
Structure: Overhead "tent" — canopy grows horizontally, high off ground; clusters hang underneath
Character: Encourages high yields; typical of southern regions
Regions: Abruzzo, Campania, Puglia, Sicilia (historically)
Status: Largely replaced by modern systems, but still used for table grapes. Seeing resurgence as climate change strategy (shade protection).

Low-Trained Systems
Structure: Trunk with single horizontal permanent arm (cordon) on support wire. Cordon bears 4-8 spurs, each with 2-4 buds.
Variants: Double cordon has arms extending from both sides
Best for: Medium-to-poor soils; allows mechanical pruning
Structure: Trunk with one fruiting cane (6-10+ buds) and one two-bud renewal spur. Cane trained along horizontal wire; may be arched or flat.
Variants:
- Double Guyot: Canes extending from both sides
- Cappuccina/Capovolto: Veneto variant
- Archetto: Toscana variant (arched cane)
Best for: Poor, dry hillside soils with limited vegetative growth
History: Introduced by ancient Greeks
Structure: Free-standing (no trellis). Short trunk with 3-5 short arms encircling trunk, each with 1-2 two-bud spurs.
Character: Low-yielding, labor-intensive; produces high-quality, very ripe grapes
Best for: Hot, arid climates (vines benefit from ground-radiated heat)
Regions: Sicilia, Sardegna, Puglia. Also some cooler northern regions (Valle d'Aosta) for extra ground heat.

Viticultural Practices
Evolution from Conventional Farming
Post-WWII agrochemical use increased crop health/yields but had unexpected negative environmental impacts. Chemicals' toxicity extends beyond targets; herbicides cause erosion and runoff; soil organisms are killed, reducing organic content and requiring more fertilizer. Many growers now turning to environmentally responsible practices.
Italian term: Lotta ragionata ("reasoned fight")
Approach: More discriminate agrochemical use — spray only when necessary (not on set schedule)
Practices:
- Cover crops: Minimize erosion, increase soil biomass, increase grape phenolics, control vine vigor, attract diverse insect populations for natural equilibrium
- Pheromone traps: Biological insect control
- Organic mulches: Cut cover crop left in place — decreases disease/pest pressure, returns nutrients to soil
Certification: No official certification required — stepping stone to organic/biodynamic
Italian term: Viticoltura biologica
Principles: Eliminates all synthetic inputs and agrochemical products
Permitted materials: Copper, sulfur, plant-based foliar sprays
Regulation: EU set organic farming regulations in 2007 through Bioagricert. EU-certified farmers may display Eurofeuille logo.

Name: PIWI = pilzwiderstandsfähig (German for "fungus resistant")
History:

Character: Crossings between Vitis vinifera and other Vitis species. Bred over generations until majority DNA is vinifera. Different from early hybrids criticized for "foxy" flavors.

- Decrease soil compaction and CO2 emissions (fewer tractor passes)
- Lower overall production costs

Early adopter: Alto Adige
Origin: American hybrid adopted late 19th century post-phylloxera
Character: Cold-tolerant, resistant to phylloxera and mildew, generous yields. Wild strawberry and red currant flavors.
Region: Particularly favored in Treviso (Veneto)
Ban: 1979 EU made non-vinifera wine production illegal. 1988-1993: 300,000 ha uprooted in Italy/France.
Today: Illegal for commercial production; permitted for domestic consumption. Annual Clinto wine festival. Used for Ubriaco al Fragola Clinto cheese (rind rubbed with Clinto must).
Climate Change Impacts
Initially welcomed (riper fruit, mature phenolics) but now problematic with droughts, increased temperatures, and extreme weather events.
Challenges
