Winemaking

Semi-Carbonic Maceration

Enzymatic (intracellular) + yeast fermentation. Fresh, aromatic: candied fruit, banana, bubble-gum. Serve slightly chilled.

Bourgogne-Style

Destemmed, crushed, traditional ferment. More complex, oaky. Used in Crus (esp. Moulin-à-Vent). Never for Nouveau.
